Ingredients
2 Tbs of hummus (home-made is the best)
3 sweet tomatoes (cut in half and seedless)
Handful of spinach or romaine lettuce
3-5 black olives
1 Tbs vegan mozzarella cheese
Whole-wheat pita wrap
Optional: Artichoke
Optional: falafel (home-made can be found in a separate recipe)
Directions
1. Add all ingredients in the wrap. Enjoy!
This dish is great with a tahini sauce (for dipping or to spread in the center).
Tahini Sauce:
3 Garlic Cloves
½ Teaspoon Kosher Salt
½ Cup Tahini
1/3 Cup Fresh Lemon Juice
½ Teaspoon Lemon Zest
¼ Cup Water
¼ Cup Extra Virgin Olive Oil
1 Tablespoon Fresh Parsley, finely chopped
1 Tablespoon Fresh Cilantro, finely chopped
¼ Teaspoon Ground Cumin
